The Easter Newsletter
Dear friends,
This is the after Xmas newsletter!! and it is now, well after Xmas -- now right at the beginning of March -- and here in the south of the South Island the mornings are now heavy with dew and the nights are getting cooler and it is almost time for the fire -- it does not seem quite right -- summer was just all too short.
Immediately after Xmas, I went back to Canada - in the winter! -- with about 20cm of thick white ice on the ground covered with half a meter of snow -- it is a way of life that must be taken seriously.

During that time, I went and saw the St Alberts cheese factory just outside of Ottawa.
Amongst other things, they make 8 tonnes of curd cheese a day!! -- and almost all of it is sold as fresh squeaky curd that day.
Evansdale would like to be able to do that and I am actively working on a distribution plan here in Dunedin; but if anyone has any ideas of distribution to other places please let me know.
And what is curd. CURD CHEESE -- this is the curd that comes as soon as the cheese is made-- it is drained in the vat, salted, put through an extrusion machine and packaged and sold.
It has a special flavour and texture-- and can be used in all sorts of ways.
It is a really versatile food product.
Now, the animals-- Phillip is still Phillip -- I am amazed how he can find the smallest and tiniest bit of sunlight to lie in!! Pig is still around -- recently has kept on escaping and escaping and escaping-- she has tasted freedom and will never be the same again !!!
Factory
At this time of the year these are the very best of the cheese- these cheeses were made in January and February when the milk is very stable and will remain so for the next few months.
At present we are making a lot of Bay Yellows for winter time-- these are BIG cheeses-- weighing about 10Kg.
Cheese awards -- we will enter now-- for a number of reasons we were reluctant to enter cheese this year- it has become -- for us - very Auckland based - and while there is nothing wrong with Auckland !!! there are times that we feel a long way from there!!
And now for March, happy times -- Easter coming.

DID YOU KNOW -- on the continent -- cheese was given before Easter eggs at Easter- These cheese always came from the very first cheese of the new season and were always fresh!!
So Easter cheese.
