January 2005 Newsletter
Dear friends,
By now Xmas is well and truly over - and I know that for you all, it would have been a time of family, friends and food. A time for good things to be remembered and a looking forward to a New Year and all that it will bring you.
For us here at the factory it was for us by far the busiest Xmas ever - Right through October and November we made as much of all of our products as we could.
I remember lying in bed at night wondering how on earth we were going to sell all of this cheese. You know - the 2am demons !!
Well, sell it we did and then we thought that we would run out. At one stage we had put the orders in a priority list !!! But I think now - in the new year - we sent cheese to everyone who ordered it! There are certainly better ways of doing it, and this year we will be working on those systems as the year goes on.
If you have any complaints -- or comments please let us know - like all small companies - we depend totally upon your good will and I would hate to think that there was someone unhappy about the service.
Remember ---- if you don't tell us, we can't help you.
The Cheeses for January
The Farmhouses will be wonderful from January through to April--
Their high fat contents of September to Novemeber are behind us now and from December onwards the cheese will develop that hard centre with the typical softer outside.
And the Blues - these should now be developing very well after having a very strong run on them pre Xmas. All of our blues are soft and creamy - remember that we usually have Bay blue and then the special Marilyn Blue - usually this is only sold at the open markets but there times when this is available through the shopping trolley here.
Caerphilly --- that very soft and very young white cheese that we have made our own. Tried it yet?.wonderful with fruit or with quince paste and a snax biscuit. And you can cook with it - a hot searing pan - a quick heat on both sides and then serve and eat immediately with fruit or conserve.

Ruby Red and Komene Kass----We will have much more of the aged Ruby Red in January and the Komene Kass - that we ran out of over Xmas will be available from Mid January onwards.
The next news letter will have in it, photos of the factory and cheeses etc – guess what Colin got for Xmas!!! but right now this is being written to you from Quebec Canada - amongst deep snow and freezing ice.
